What you'll need:
- 10-ounces fresh cut, fresh asparagus
- 1 tomato, chopped
- 2 tbs thinly sliced green onion
- 3 tbs nonfat plain yogurt
- 1 tbs grated Parmesan cheese
- 1 tsp brown/spicy mustard
- 10 leaves leaf lettuce
Instructions:
- Cut asparagus into 1 1/2 inch pieces and microwave for five minutes (for a crisp texture)
- In bowl combined asparagus, tomatoes, and onions; set aside
- In small bowl, whisk together yogurt, cheese, and mustard. Add asparagus and tomato mix and toss until coated.
- To serve, line salad plates with leaf lettuce leaves and spoon salad on top. Enjoy!
