Asparagus and Tomato Salad with Yogurt-Cheese Dressing

Looking for more than your average roasted asparagus? Look no further! Fresh and nutritious to compliment any dish; add some salt and pepper to desired perfection!

What you'll need:
  • 10-ounces fresh cut, fresh asparagus
  • 1 tomato, chopped
  • 2 tbs thinly sliced green onion
  • 3 tbs nonfat plain yogurt
  • 1 tbs grated Parmesan cheese
  • 1 tsp brown/spicy mustard
  • 10 leaves leaf lettuce 

Instructions:

  1. Cut asparagus into 1 1/2 inch pieces and microwave for five minutes (for a crisp texture)
  2. In bowl combined asparagus, tomatoes, and onions; set aside
  3. In small bowl, whisk together yogurt, cheese, and mustard. Add asparagus and tomato mix and toss until coated.
  4. To serve, line salad plates with leaf lettuce leaves and spoon salad on top. Enjoy!
